I never quite understood where the phrase "Acting the Goat" came from. I am pretty sure that it is some kind of satanic reference.

Then again, why are goats called "nanny" and "billy". Not very devilish names are they?

There are so few "evil" carbs in cheese, any cheese, that eating in moderation makes cheese an excellent component of a low carb diet.

Goats cheese, soft ,hard, or semi-soft are all less than 1 carb per oz. The way in which the carbs are calculated is inaccurate enough for the differences to be disregarded. So from a carb point of view I would ignore what is better or worse.

Clearly for any other intolerence, only your own body will know. For some, too much cheese can lead to a stall.

I like most cheeses, but am not that fond of goats cheese. It seems too expensive for too little cheese.
