WOW! I can't WAIT for this stuff to come out! I also anticipate I will be dragging out the old biochem text once again to see what this tagatose is exactly -- I expect it's a monosaccharide (simple sugar) like glucose. Oh no, the curiosity is too much -- must check now!

Nothing about it in the biochem text, but this page http://www.mikrochem.sk/html/d-tagatose.htm confirms that it is a simple sugar like fructose. I love to be right!

Correction: it IS in my biochem text after all -- I didn't turn to the page with fructose on it. DUH!
