Question How do you Count Hidden Carbs

Now that we have the wonderful hidden carb counter...

What do you do with all those hidden carbs? Do you go cold turkey and count them all? Or something inbetween?

I was searching for info on poly sugar alcohols, the source of all those hidden carbs and found a blurb about how diabetics could subtract about half of the carbs toward their allotment. Does anyone else do this? I 've just tried to stay away from them while I'm trying to lose, and am more interested in trying them during maintenance. (I'd really like to get a hold of some maltitol to try to make some of my own candy. We have a big family tradition in candy making from several generations and it pained me to no end to think that I had to give that up. But now I'm looking forward to perfecting some of the old family recipes to sugarless ones! )

So what do you do?
