hi Maggie,

All grains are high in carbs. Oats have about 60% as much carb. as wheat, or 14g per ¼ cup .... wheat has 24g for ¼ cup all-purpose.

Generally, oats are used in small amounts in a recipe, and often mixed with soy flour which is much lower in carbs, 8.5g per ¼ cup. Soy flour is strong tasting though, and often gives a spongey texture when used alone.

Corrine T. Netzer's "Complete Book of Food Counts" lists bittersweet baking chocolate at 8g per ½ oz (16g per square). You might prefer to use unsweetened chocolate, at 4g per ½ oz (8g per square), then add a little artificial sweetener.
