I have found it's a lot easier to just cook it first and remove the seeds after. I either bake or microwave it.
I use it in casseroles, saute it with garlic and herbs, put pesto on it - basically use it any way I would use either spaghetti or squash. It's also good sweet with a little cinnamon and nuts.
