If your gravy is thickened using processed (white) flour or corn starch, then it should be avoided. One of the goals of LCing is to eliminate processed flours from your diet.

You can make an acceptable gravy using a small saucepan with a bit of drippings in it. Add a tablespoon or two of heavy cream, and simmer on low for a minute or 2 until the sauce thickens. It makes only a bit of gravy, but it is satisfying, and if you think about it, there really isn't a need to have your food swimming in gravy.

Before LCing, gravy was one of my biggest downfalls. I was never satisfied unless I made a huge amount of it, and I needed to eat the extra on my plate with a spoon, or by dunking in a couple of hunks of bread. Now, just a bit drizzled over meat is quite satisfying.
