I never tried eggplant before, but I saw some at the farmer's market and thought I would give it a try. I LOVED the eggplant dipped in egg and parm. cheese. It was absolutely fabulous! I also tried grilling it with the marinated recipe, I just mixed all the ingredients together, dipped it in the mixture and grilled it. Let me tell ya.... it was disgusting! It was sooooo bitter, I couldn't even swallow the first bite. I salted and let them all sit the same amount of time. ( I used 1/2 of the same eggplant for each version) So I know it wasn't from not salting and draining it enough. IMO, stick with the parm and egg.
