Yep!! The sugars (ie carbs) cook out of the veggies most people put in their stocks just to season the broth a bit and cook to mush. (things like carrots, onions, turnips, celery, etc) If you add the veggies at the very end, the sugars don't have time to leach out and therefore, the carbs in the stock would be less.

Nothing better than homemade stock! yummmmmmm!
