There is also something about right turning bacteria vrs left turning which is suposed to make keifer better for small children and pregnant women then yogurt.
Lifeway has a great keifer that is lower in carbs. I think it's 8g for a cup. They are also coming out with a line of splenda sweetened keifer.
I have to try that coconut milk one now, Will it work with yogurt? How does the fermitation take place without lactose, does it eat other sugars? Would soy milk work as well, or no if there isn't any more sugars?
