Well, we tried them and they really worked! Didn't need to fry them, too messy for me, and they got crisp skins and tasted great! An added bonus is that they also rendered out a fair amount of chicken fat which I refrigerated in a bowl and used to make a goat-cheese omelt this morning. It gives a nicely subtle hint of extra richness. One hint is that it didn't require the full hour. 45 minutes seemed to do the trick.

And what's also good is that chicken wings are cheap!
