Am I making my salads too good (hi carb) or are you people not seeing the salad light? Most of you simply list lettuce or one type of lettuce. I usually make a tri- coloured salad consisting of endive, raddichio (spelling), and either butter lettuce or romaine. On this goes extra virgin olive oil, a little salt, and shaved parmasian cheese. We should be enjoying these salads since they're almost our only carbs.
Also, very thinly sliced fennel with olive oil, salt, pepper, and red wine vinegar.
