Any liquid would work I think was what the recipe was saying. I have used the recipe for ten years so as my eating has changed so have the liquid I used. I have used milk, soymilk or watered down half and half or cream for the recipe so I am sure whatever would work. I have even used watered down sour cream just because it was all I had at the time. It's eggs and they are basically fool proof. The only mistake I have seen made (which REALLy made me laugh) was I warned a friend to squeeze her frozen spinach dry before adding it, which of course she didn't do, and hers came out like soup.
