We also add chopped parsley to our salads. I love the flavor, and just 1/4 cup of it gives 33% of the RDA of vitamin C, 83 grams of potassium, 16% vitamin A, 6% folate and more for 1/2 net carb. Compare that to spinach (which is better than lettuce): 4% Vitamin C, 0.214 grams of potassium, 10% vitamin A, 4% folate, and of course practically 0 carbs.

Oops! I forgot iron! 1/4 Cup of spinach has 1% of RDA of iron. 1/4 Cup parsley has 5%. (I was told spinach was such a good source of iron all my life!)
