Default Another idea for Atkins Bake Mix....faux toast for eggs!

Well I have been LC'in since Feb. and was soooo dying for fried eggs as opposed to the scrambled/omlette/hard boiled I have been eating all this time. But I can't eat fried eggs without "toast" to moosh em and put them on so I have this can of Atkins Bake Mix in the cupboard so I made these pancakes and threw 2 of them in the toaster and YAY worked for me! Was close enough to "toast" that I'll make these frequently now. Try it if you don't know what to do with that bake mix lol.

1/2 cup Atkins Bake Mix (or Keto or whatever)
1/2 tsp. baking powder
2 eggs
2 Tbs. sour cream

Mix the bake mix and baking powder in a small bowl. In another bowl mix the eggs and sour cream until well blended. Add egg mixture to bake mix and mix until smoothish. Add enough water to make the batter about like cream of wheat...I added about 1/4 cup. Drop 2 Tbs. batter in hot fry pan and spread it out a bit to make larger pancake. Flip when edges are dry and bubbles form on top.

I got 7 pancakes from this recipe and got the following from FitDay:

Per each pancake:

Calories 67
Fat 3g
Carbs 2g
Fiber 1g (actually like .91)
Protein 7

Like I said they kinda bland just plain but I toasted 2 of them and was really good with fried eggs
