www.wildernessfamilynaturals.com has a coconut cream. I bought some but it is so overpoweringly rich you really do have to cut it somehow or just use it in cooking. (The baby loves it though, so maybe it's just me) It could be an interesting alternative. The problem though it it is almost a solid so you may have to heat it first to get it to disolve in coffee.
In my teas such as chai I love soy slender vanilla. It sweetenes it just slightly and is very low carb. In coffee though it has a tendancy to do some weird seperating thing that just looks nasty.
