Sag Paneer is a nice curry type dish, but probably not what you are looking for.

What I do is take and melt butter in a pan, then mix in curry powder and cook for a little bit. Then add fresh spinach and cook until wilted. After that you add cottage cheese and cook until the curds are melted.

For a meat based curry I like to use either coconut milk or yogurt. I brown the meat, then add curry spices. After it cooks a bit I add the liquid and cook a while longer. Since we can't have rice, I will mix in grated cauliflower as a filler to kind of soak up the sauce.
