Remind me that it is a REWARD at payment time! LOL!! But even tho, it really wasnt a 'reward' so to speak.. ha haa.. it certainly will be remembered that I got it at a significant point in my life...huh?

How is everyone doing? I have been extremely busy, and in fact, as of tomorrow it will be day 12 in a row that I have been working.. and looks like my first real 'off' day is not til next sunday!!! Just one of those 'seasons'..and I am going to not get stressed about it, but I am a little tired, didnt sleep much last nite, too wired from getting the car. Just like a kid huh?

Here is a recipe of a parmesan cheese sauce that I used on some whiting fish:

Whiting Fillets


2 lb whiting fillets
2 tbsp lemon juice
½ cup grated Parmesan cheese
¼ cup butter
3 tbsp mayonnaise
3 tbsp chopped green onion
¼ tsp salt

Thaw fish if frozen. Place fillets in single layer on a well greased baking platter. Brush with lemon juice.

Combine remaining ingredients and set aside.

Broil fish for 6 minutes or until fish flakes easily when tested with a fork.

Remove from heat and spread the cheese mixture over each fillet.

Broil 2 more minutes until lightly brown.

Serves 6
