Hi guys...I have had tons of trouble using the bake mix, but I do have one recipe that works really well with it. It is for a tuna casserole, but I have also made chicken, spinach, and ham casseroles with it. I got it from Dana Carpender's 500 Low Carb Recipes.

You just use a can of tuna (or chicken, or whatever you want), 1 egg, salt, pepper, whatever spices or veggies you want to add, .5 cup of the atkins mix, 1 T. oil, 2 cups of shredded cheese (whatever you like)---then mix well and bake in casserole dish for about 25-30 minutes depending on your oven. I don't have the exact recipe in front of me, but I think that's it! If anyone wants it---let me know, I'll be home this afternoon and can just post it then!

By the way, has anyone ever breaded chicken with it? How did that go and how did you do it? Thanks--
