I'd stick some meat in that omlette, maybe some diced ham or sausage, and cut out the sour cream or some of the veggies. That might make it more satisfying without increasing the carbs or calories.
But mainly concentrate on getting through Induction with only the allowed foods, then worry about portions and snacking later as you get more used to low-carb.
