I haven't tried this particular recipe but I make roasted veggies quite often. I usually use Cauliflower, broccoli, onions, sliced garlic, chickpeas, zuchini, sweet potato and indian type spices(curry, cumin, etc but thats just a preference of mine). Toss with olive oil and roast in the oven pretty much like the other recipe indicated. It's excellent topped with sour cream and tucked into a LC torilla.
