another way of looking at it...
Holly, the lactose in the whey (essentially the liquid with protein and carbs suspended in it) is where the carbs are... the lactose or milk sugar of course. There's lots more whey in the thinner milk than there is fat, and of course, lots less whey in the cream. More whey, more lactose, more carbs.
