Default keeping it clean a real newbie snack ?

ive been atkin-ing for about three weeks coming up (seems like forever really)

so I’m starting to get a itch for new foods, obviously lc of course, and I’d really like to stick to the 20 or less carbs for the day

I’ve been going through the recipes like crazy and I’ve seen some really good ones that I’d love to try.
but my overwhelming question is, where is this nitrate free meat.

a lot of the quick snacks call for lunch meat, but all of the lunch meat that I’ve seen is nitrate packed. which = fear of not keeping it clean.

bacon
lunch meats
pepperoni

where is this nitrate free meat?

then second, would it be safe to assume that if I go to the deli section of my grocery that the meat that they slice would be nitrate free?

then second, cheese. doesn’t induction call for ummm about an ounce of cheese.
and again a lot of the quick snacks scream for cheese, but yeah, I don’t think its safe to eat that much cheese at all, esp. on induction,.

does anyone have good ideas for induction snacks, currently I’m eating small cans of tuna na na cant last to much longer on that
