Unfortunately Atkins doesn't know THAT much about fungal infections but I was thrilled he had that chapter.
Some people never get rid of fungal infections - but don't lose hope with that statement!
As you say, you probably only got a yeast infection as a result of the sugar alcohols (maltitol will do that). Try to keep your eyes peeled for the candies with ONLy erythritol, isomalt and inulin. If they have any other sweetener (besides sucralose-splenda) they will definitely give you trouble. You posted this so long ago that I'm sure you've found some resolution to it all.
I don't find the mushrooms or cheese bother me nearly as much as flour, sugar, most sugar alcohols and regular alcohol for drinking. Vinegar can be bad on me too but not like the list I just gave.
