OMGS! It's SO SOOOO easy to make your own!

(I've seen other recipes - but none that tasted right - here's one that TASTES like Hellman's/Best Foods)

2 eggs - yolks separated from whites (Our eggs are always large - with other sizes - add or decrease salt and lemon juice to taste)
1 cup vegetable (canola or whatever - olive will make it taste odd) oil
1.5 TBSP Lemon Juice
Dash of salt (salt to taste)

(I've found a "stick" or "hand" mixer - you know - those ones by "Braun" for example work best here - but a whisk will do! It's a lot just more work! Oh and I don't mean those mixers where you stick the two beaters in, like you'd use for whipping cream - the straight ones with the blade in the bottom)

Put the egg yolks, lemon juice and salt in a small bowl (glass is best) then whisk or mix them until they're all smooth and slightly ligher yellow, then add in just a tad of the oil (maybe 1/4) then blend that real well.

Now, if you're using a whisk (and really the stick mixer is best!) you would add the oil in slowly blending it well before you add more oil, then, add the egg whites all at once and whick the heck out of it! DONE!

If you're using the stick mixer you put a little oil in and blend it then you can really just add the rest of the oil all at once, you don't need to do it bit by bit like the above. Blend that really well (about 2-3 seconds) so it's all smooth and shiny then add the whites all at once and you'll instantly see the change! The whites will be stiff almost immediately! Blend it all through with the stick mixer and DONE!

You'll know it right away with the stick mixer as it really will look and taste just like Real Mayonnaise (not Miracle Whip - but Mayonnaise). With the whisk it will take a bit longer.

You can do this with a standard hand mixer as well I am sure, but I would mix the ingredients on slow to medium mixing the oil in little by litte and only go to high speed when you've added the whites. I've never done it with that kind so I cannot say for sure how long it would take, etc.

ENJOY!
