Almonds or macadamia nuts are a good high calorie snack. Almonds also have a lot of calcium so a double advantage there! I probably eat too much beef, but it is high in calories too. You might try experimenting with sour cream or sauces that you like, using them on things you wouldn't normally think of. I'm probably weird, but I love melted garlic butter on things, veggies, steak, chicken, you name it. HTH.
