It probably wasn't mentioned because the US Dept. of Agriculture has brainwashed the American medical community that a diet consisting of 5 to 7 servings a day of grain product is the only way to go. I'm sure it has nothing to do with the fact that the number one cash crop grown in America is... uh... grain.

The French are far too astute to be suckered in by this theory. Every day, the average Parisian eats approximately the same levels of carb that someone on Atkins or Carb Addicts maintenance diet (while indulging in liberal amounts of meats, cheeses, creamy sauces and butter) and the country manages to maintain an obesity level about one third to one half ours (depending on the weight chart one uses to calculate obesity).
