I've made a LM pie using Splenda and xanthan gum as a thickener (added the xanthan after mixture had cooked). You can also use arrowroot powder for the thickener if you don't like the xanthan gum, but it has 7 carbs per tablespoon.
I use ground pecans, butter, egg white, and Splenda for the crust...bake till VERY light golden.
