I agree, I love the taste of meat. I very rarely use any kind of sauces, I do make up my own marinades though for the barbecue (what a great wol this is!). Some of my favourites include rubbing olive oil, and a mixture of pounded fresh garlic and rosemary into lamb. The aroma when it is cooking is truly divine. Also soy sauce (LC) and ginger for chicken, or a small amount of yoghurt (carbs thinned down with a little cream) with lime juice and chilli powder to taste. These all help the meats juices and tenderise them, so it isnt as dry. A dash of mustard is great but just a splash of basic fresh ground pepper (mixed peppercorns are fabby) just transforms the dullest of meats! Enjoy.
