I posted this in my journal.

It is remarkable. The only carbs would be from the few garlic cloves and onions.

Peking Roast
3-5lb. beef roast
Onion
Garlic cloves
1 c. vinegar
2 c. strong coffee
2 c. water


Make slits into roast and insert onion pieces and cloves of garlic. Put meat in bowl and pour 1 cup vinegar over it. (I rub a bit of olive oil over the roast after pouring on the vinegar).

Cover and place in refrigerator for 24 hours, basting occasionally.

Pour off vinegar and brown meat in oil until dark on both sides. Pour coffee over meat. Add 2 cups water and cover. Cook in crock-pot for 6 hours. More water may be added if necessary. Note: Cheaper cuts of meat will also work.
