Default Trouble with using Bake Mix as a coating

Every time I have used Atkins Bake Mix as a coating to fry something, it has foamed like crazy in the skillet. I have used it by itself and in a combo with Parm cheese and both times it has foamed. Using just the Parm cheese doesn't cause the foaming. Leading me to believe that it is the Bake Mix.
Has anyone else had this problem? I see so many posts about using it as a coating that I can't believe they would use it if it does what mine does.
