RandiS, I'm sorry to correct you, but DANDR states 2 cups of salad veggies PLUS 1 cup of the "other" acceptable veggies (which do include tomatoes), or 3 cups of salad veggies.
Claudius, I think you are doing great. Veggies are likely not your problem. I don't think anyone ever got fat from eating too many veggies (unless you count corn and potatoes!)
