This has always puzzled me. In my Atkins books it says no fresh cheeses on Induction but in the very same book it lists ricotta cheese omelette as an Induction recipe. Odd huh?

I emailed the Center but never got a reply. It's just a touch confusing. I gave in and ate it anyway and was fine.
