Max, could you break the eggs the night before? I know eggs will store quite well for a few days in a bowl out of their shell. An egg in a non-cracked shell has a shelf-life of around 30 days or longer, but one out of the shell (or in a cracked shell) has a shelf life of about 5 days. Anyhow, just crack them into a bowl the night before, mix them up, add some seasonings and put it in the fridge. Take it out in the morning, give it a stir and cook it! Or if you prefer them fried, don't stir!

We also boil about a dozen-and-a-half eggs every few days (I'm sure for one you wouldn't need to do that many, though). We keep them in the fridge, and if we want boiled eggs for breakfast, just peel the egg and microwave it for a few seconds (not too long though because they do like to explode). Once they're hot, I mash mine with a fork and stir in butter, salt and pepper.
