According to Rick Mendosa's extensive GI lists .. http://diabetes.about.com/library/m...gi/ngilists.htm .. apples are relatively low GI, although it's true that sweeter apples rate a bit higher than tart varieties. The difference really isn't huge
I would keep an eye on the portion size .. maybe weigh the apple so you have a clearer idea of how many grams of carbs there really are, rather than just an eyeball gauge of "large" or "small". A large apple will have more carbs so it really doesn't matter if it rates a few points lower on the GI scale .. all it means is that the carbs will be absorbed a bit more slowly.
