You'd cook it with indirect heat... turn one burner on, but put it over the UNLIT one to cook... it'll take quite a while, depending on size. I'd highly recommend using a meat thermometer.
The string is MEANT to be there, to hold it together until it's cooked. After cooking, just snip it and remove.
