I kind of shoot from the hip on chilli. Black soy beans in a can are extreamly low carb. You can use ground meats, or cubed chicken depending. I made one that was chicken, cream and chilli spices. Not a real chilli but good.

I've also made a chilli with ground turkey and black soy beans. Just make sure to go lite on the tomato sauce if you use it in your chilli. I have chugwater chili spice mix, which is probably not available in your area. Just do an online search for chili recipes to get ideas of different spice combinations to add to the chilli.

Basicaly you brown your meat with onion and garlic then either throw it in a slow cooker with alot of water and spices, or in a large pot with water and spices then let it cook
