I cook it all time...I use one of those old fashioned box graters and you can grate it to the perfect consistency using the largest holes (don't have a grater on my processor)

I don't think it would work well in sushi as is, because it doesn't stick together...sticky rice is an essential for sushi. I think the caul rice would just fall out...so one would need to experiment..
