I checked your journal, and your menu looks really good.

Increasing your carbs is pretty easy - I noticed you're already having half an apple or yogurt here and there, those are really good ideas. You could try other moderate carb fruit and veggies, too, like squash, sweet pototes, melons, peaches or apricots. I like apricots because they're really small.

For protein, how about picking up a canister of protein shake mix? It's cheap and almost effortless to prepare. Tuna is my other favorite protein-booster. Again, cheap and all you have to do is open the can. Eggs, as well - I almost always add a scrambled egg when I make stir-fry. You could also prepare and freeze a bunch of burgers from whatever kind of ground meat you'd like, and whenever you want one, just whip it out and cook it.
