I have to take issue with Dr. Groves here. Apparently one can live quite a healthful life without any carbs at all. Witness the Inuits and the Kung. A famous athropologist and his colleage went a full year on nothing but meat and fish--while under close medical scrutiny--and did fine: he lost his excess weight, his cholesterol dropped (if that matters), and he had no mineral or vitamin deficiencies. It made quite a bit of publicity. Read about it here.
