Default butternut squash suggestion

I just cut up the squash (or half of one or whatever, it keeps well in the fridge if you wrap it) into roughly 1 inch cubes and peel them. Then I steam until tender (doesn't take very long) and then put in a heatproof bowl with butter and parmesan cheese on top and put under the grill until hot and bubbly. A bit of freshly ground black pepper is a good addition. I know butternut squash is higher in carbs than other ones, but it makes a tasty treat and can't be too naughty....

Thanks for all the fantastic cauliflower recipes. I did something similar by mashing and adding cheese, but I think I'll be able to improve on it now. Yes, my husband was suspicious (took about one teaspoonful to start with) but pronounced it 'very good' and took loads more.
