Wheat Protein Isolate
Has anyone tried this? www.locarber.com sells it; apparently it has 1.5 grams of carbs per cup (yes, you read that correctly!) and can be used as a cup-for-cup replacement for flour. They say it has gluten, so can be used for bread, pizza, etc. Now I know I have said many times that I don't miss bread, but I can't help being curious about this in case my dh's pizza craving gets to him. We think he has a wheat allergy, but it would be interesting to see if this triggers it or if it is just the starch in wheat flour that causes the reflux from which he suffered until we went LC.
