Default Beer Batter Fish or Whatever

After reading about onion rings, it dawned on me that with low carb beer available, why couldn't we come up with a Low Carb Beer Batter for fish or shrimp or onion rings or anything else that we would want to fry up light and crunchy. My first try was a success! I used up some "Ultimate Bake Mix" from Jennifer Eloff's Splendid Low Carbing book that was in the fridge, so there is a little whole wheat flour involved here. The carb counts are good, though, and it was wonderful!

Here's what I did:

1/2 cup Ultimate Bake Mix
1/4 teaspoon Cajun seasoning
sprinkle of salt
1 teaspoon olive oil
1 tablespoon water
1/4 cup Michelob Ultra Beer
1 egg, separated

Mix bake mix, seasonings, oil, beer and water with a wire whisk. While stirring, beat in the egg yolk. Cover batter with a cloth and let stand for 20 minutes (or up to 2-3 hours) Beat egg white until soft and fold into batter.

Heat fryer to 374 degrees. Pat dry the haddock fillets (or shrimp or onion rings...) and coat with batter Deep fry for 4-5 minutes for fish, 2-3 minutes for shrimp or onion rings. Drain on paper towels and enjoy!

The bake mix I used is:

1/2 cup ground almonds
1/3 cup whole wheat flour
1/3 cup natural whey protein powder
3 tablespoons vital wheat gluten

This makes 1 1/2 cups.

Effective carb counts per serving (1/2 recipe): Bake mix 5; beer .433; egg .5 for a total of just about 6 grams. The fish has 0 carbs but be sure to add the carbs in the onions or other veggies you use.
