Has anyone simply tried using soy protein isolate in powder form to make pancakes?

I have two bake mixes...Carbolite Vanilla Bake Mix and Atkins Quick Cuisine for pancakes & waffles. Since I'm still on induction (from the looks of things, it may be a couple more weeks at least...) I have actually only tried the Carbolite once...and it's okay.

Then I read the ingredient list, and it said soy protein isolate, vanilla flavoring, and Splenda. That 's all. Hmmmm...if that's true...seems like I could just use the soy protein isolate powder sold at the local Fred Meyer (Kroger) store in about the same way.
