How would you like to have breaded pork chops with a tasty mushroom sauce...I did, last week. How 'bout BBQ ribs or awesome pan-fried chicken? I've had all these, and more, during the last couple of weeks...and have never once reached 20 carbs in a day!

Trout almondine, shrimp scampi, and pepper-beef stir-fry. How many of these things have you had since you completed Induction? How about bacon-mushroom-swiss burgers on revolution rolls? Or chicken cordon bleu, lamb kabobs, pot roast and gravy...or even french toast slathered with butter and syrup? I've eaten every one of these dishes in the last few weeks, and there isn't one that I wouldn't have again tomorrow. And none of these has been a "cheat".

Each of these recipes was posted on the web, many on this site. We've found dozens of others that we haven't even gotten to yet. This way of eating doesn't have to involve sacrifice, just a willingness to discover some new favorite dishes with low-carb ingredients. I'm looking forward to experimenting with eggs benedict this weekend, using rev rolls instead of english muffins and a lc hollandaise sauce. If that works out, we may even shoot for eggs florentine the following weekend!

You don't need to be a creative chef to eat well on Atkins...you just need to follow the recipes that the trailblazers on this site (and others) have developed. There are terrific choices in appetizers, soups, salads, entrees, side-dishes and desserts, all kitchen-tested and waiting for your discovery.

Don't let a restricted menu drive you away from lc foods. Many of these recipes are easy to make (despite the grand names), and very tasty to boot. We've had guests over for dinner a couple of times since we started the Atkins program, and they've never realized they were eating a low-carb meal at our table! Just because it's healthy eating doesn't mean you have to settle for boring meals.
