Hi! My way of doing it would be this: the cheese I buy comes in 12 oz packages. Cut it in quarters.

I actually do this any time I open a pack of cheese. I cut it into 1 oz pieces just based on how many oz was in the whole package. Hey, if you're cutting yourself one piece, you might as well save some time and cut it all up...

This won't work if the package is already part gone. So one rule of thumb is that one ounce of cheese is about the size of two dice.
