It's funny what we start diving into and pretending it's something else. Have you ever tried jicama? It's got that sweet crunch and very low carb due to high fiber.
For a slightly sweeter treat, try tossing cucumber with some lime juice and a smidgeon of Splenda. Sweet cucumber salad! Dill and sour cream are also good additions to make a cucumber a bit sweet. Mmm, now I want cold cucumber soup!
