I had one light english muffin (much lower in carbs than reg. english muffins), toasted, stuffed with a little mayo, one Morningstar Farms Better N' Burger, and about 2 oz. yogurt cheese.
This really filled me up and kept me full for HOURS.
Nature's Grain makes the Light English Muffins. They are loaded with fiber and very tasty; I can't tell the difference from regular english muffins.
The Yogurt Cheese comes from Trader Joes. It's a hard, slicing cheese (like a cheddar...but doesn't taste as good!)...will use it up, but can't say I'd buy it again!
But overall this was a quick, tasty breakfast. Next time I'll make it with cheddar cheese.
