Local IGA supermarket (Bribie Island, Queensland) has a range of sausages and although not labelled as gluten free, the ingredients list shows only rice flour as the filler, together with some soy protein. Both of those are gluten free. My son has a gluten intolerant friend and I've tested them on him with no ill effects (thankfully!) . Don't know how much carb is in them though.
