I find this interesting and also find myself wondering why the sudden fervor to lower the cholesterol in eggs since studies have also shown that the cholesterol consumed by eating eggs has very little effect on serum cholesterol in the blood. Sounds like yet another marketing ploy playing off the world-wide cholesterol phobia. If people can be made to think that a certain product (food or otherwise) will make them healthier, they're willing to pay more $$ for it.
