Smile Mock Potato Salad

Hi All!

Just thought I would pass on a recipe I concocted last night after reading several variations of Mock Potato this and that. My Children just loved this.

Cauliflower - either fresh or frozen will do.
4 Hard boiled eggs
celery
Onions
Mayo
Vinager
Prepared Mustard
2 splenda packets
Salt & Pepper

Cook your cauliflower until done to your liking not mushey!!! They very IMPORTANT DRAIN your cauliflower very well. Then chop your eggs,celery,onions and add to cauliflower. Then in another bowl mix your mayo, vinager, prepared mustard, splenda. Pour onto the cauliflower and mix well. Chill!!! It is even better the next day when all the flavors can really come together.

As far as the exact measurement go, it goes according to how much cauliflower you use. You really don't need alot of the vinager, mustard or splenda. Start with alittle mayo 1/4 to 1/2 cup and mix in the other ingredients to your taste. I like mine on the sweet side. Also you could add alittle garlic power.

My children couldn't believe it was cauliflower!!! They had second and third helpings.
